BETTER THAN STARBUCKS– HOMEMADE BANANA BREAD:

I set out on a mission to make the best banana bread ever after Leonard insisted he needed a $6 slice of Starbucks banana bread every day. After a couple attempts, I’ve crafted the perfect recipe and I’m going to share it with you 🙂

First things first, preheat your oven to 325 degrees. Line a bread pan with wax paper and spray it with nonstick spray.

Ingredients:

Bread:

  • 1 1/2 cups of flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1.5 tsp cinnamon
  • 1 cup sugar
  • 1 extra large egg
  • 1/2 cup of extra virgin olive oil)
  • 2 tsp vanilla extract
  • 3-4 very ready bananas
  • 2/3 chopped walnuts (optional)

Icing:

  • 1/2 cream cheese block
  • 3 tbsp of powdered sugar
  • 2 tbsp of vanilla extract

Directions:

Mix all your ingredients together with a mixer and pour into your pan. Bake for 1 hour. Use a toothpick to insert into the middle of the loaf of bread until the toothpick comes out without wet batter and adjust your timer as needed. It took me about an hour and 20 minutes total. Check it frequently, you definitely don’t want burnt bread.

Take out your cream cheese to reach room temperature. Add your powdered sugar and vanilla and mix until there are no more lumps.

Once cooled off, top with the cream cheese icing and sprinkle more walnuts on top! Serve with a delicious cup of coffee 🙂
